The opinions however are all mine<\/em><\/p>\n\n\n\n<p class=\"has-medium-font-size\">The Mayan\ncivilization originated around 2600 B.C. and were a dominate power in the areas\nof what is today the Yucatan Peninsula, Guatemala, Belize, El Salvador and\nHonduras before starting to decline 3000 years later.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter is-resized\"><img decoding=\"async\" src=\"https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Chef-1.jpg\" alt=\"Chef\" class=\"wp-image-11185\" width=\"600\" height=\"800\" srcset=\"https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Chef-1.jpg 600w, https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Chef-1-428x570.jpg 428w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Although not the dominate nation it once was, there are numerous examples of how powerful they were in the <a href=\"https:\/\/thetravellingfool.com\/how-to-visit-the-mayan-ruins-of-coba-mexico\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Mayan ruins (opens in a new tab)\">Mayan ruins<\/a> that exist today. The Mayan people still live in their ancestral lands and the <a rel=\"noreferrer noopener\" aria-label=\"Mayan culture  (opens in a new tab)\" href=\"https:\/\/maya.nmai.si.edu\/maya\" target=\"_blank\">Mayan culture <\/a>has influenced much of the present day area. That includes the food and cooking. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">The Mayans had an\nagricultural society and were also expert hunters and fishermen. Maize, beans,\nsquash, chili peppers, and avocados were grown and animals such as deer, birds\nand peccary were hunted.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">The Mayans caught\nfish using nets, trap lines and trained cormorants. The cormorant\u2019s necks were\ntied so not to swallow the fish and they would catch the fish and bring them\nback to the fishermen<\/p>\n\n\n\n<p class=\"has-medium-font-size\">The Mayans\ninfluenced a lot of modern day foods and many restaurants in the Yucatan\nPeninsula have food that is inspired by the Mayans. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">I recently stayed at the fabulous <a href=\"https:\/\/thetravellingfool.com\/grand-velas-riviera-maya-all-inclusive-luxury-resort-and-spa-playa-del-carmen\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Grand Velas Riviera Maya (opens in a new tab)\">Grand Velas Riviera Maya<\/a>, a  <br><a rel=\"noreferrer noopener\" aria-label=\"riviera maya all inclusive resort (opens in a new tab)\" href=\"http:\/\/rivieramaya.grandvelas.com\/\" target=\"_blank\">riviera maya all inclusive resort<\/a>,  in Playa Del Carmen Mexico and had a chance to sit in on a Mayan cooking class. The Grand Velas is a luxury resort and has several highly acclaimed chefs. With the word Maya in their name it is appropriate that they cook Mayan inspired food. Chaka, one of their many restaurants, offers Mayan inspired food and it was their chef that did the cooking class.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Grilled Shrimp in\nChilmole Sauce is one such meal the Mayans would have made but this one has a\nmodern spin to it.<\/p>\n\n\n\n<figure class=\"wp-block-image is-resized\"><img decoding=\"async\" src=\"https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Shrimp-1-890x668.jpg\" alt=\"Grilled Shrimp Coriander rice\" class=\"wp-image-11186\" width=\"890\" height=\"668\" srcset=\"https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Shrimp-1-890x668.jpg 890w, https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Shrimp-1-570x428.jpg 570w, https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Shrimp-1-768x576.jpg 768w, https:\/\/thetravellingfool.com\/wp-content\/uploads\/2019\/05\/Shrimp-1.jpg 1080w\" sizes=\"(max-width: 890px) 100vw, 890px\" \/><\/figure>\n\n\n\n<p style=\"text-align:center\" class=\"has-large-font-size\"><strong>Ingredients per serving<\/strong><\/p>\n\n\n\n<p class=\"has-large-font-size\">Grilled Shrimp:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">4 Jumbo Shrimp<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 tsp of oil<\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u00bd tsp salt<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 tsp black\npepper<\/p>\n\n\n\n<p class=\"has-large-font-size\">Chilmole:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">2 tbs of black\nbeans<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 1\/3 tbs of\nchopped onions<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 tsp of chopped\ngarlic<\/p>\n\n\n\n<p class=\"has-medium-font-size\">2 tsp of black\nrecado seasoning <\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u00bd tsp salt<\/p>\n\n\n\n<p class=\"has-medium-font-size\">2 tsp lard<\/p>\n\n\n\n<p class=\"has-large-font-size\">Coriander Rice:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1\/10 cup of rice<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 tsp chopped\ngarlic<\/p>\n\n\n\n<p class=\"has-medium-font-size\">2 tsp chopped\nonion<\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u00bd tsp salt<\/p>\n\n\n\n<p class=\"has-medium-font-size\">6 tsp coriander<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 1\/3 oz heavy\nwhipping cream<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 oz vegetable\noil<\/p>\n\n\n\n<p class=\"has-large-font-size\">Baby Vegetables:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 baby corn<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 carrot<\/p>\n\n\n\n<p class=\"has-medium-font-size\">2 tsp butter<\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u00bd tsp salt<\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u00bd tsp black\npepper<\/p>\n\n\n\n<p class=\"has-large-font-size\">Pickled Onion:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 tsp Purple\nOnion<\/p>\n\n\n\n<p class=\"has-medium-font-size\">1 tsp sour orange\njuice<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Dash of oregano<\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u00bd tsp salt<\/p>\n\n\n\n<p style=\"text-align:center\" class=\"has-large-font-size\"><strong>Preparation<\/strong><\/p>\n\n\n\n<p class=\"has-large-font-size\">Shrimp:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Devein and wash the shrimp. Marinate with oil, salt and pepper. Grill shrimp for 5 minutes.<\/p>\n\n\n\n<p class=\"has-large-font-size\">Chilmole:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Cook Black beans\nuntil soft. In a hot pot add onions, lard and garlic. Cook until toasted then\nadd black beans and black Recado seasoning and cook on low heat. After cooked,\nmix in blender. Cook again if necessary and add more salt to taste.<\/p>\n\n\n\n<p class=\"has-large-font-size\">Coriander Rice:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Saut\u00e9 onion and\ngarlic in oil. Add rice and cook on low heat until slightly brown. Add water\nand bring to boil. Once boiling add coriander and cook about 2 minutes. Mix in\nthe cream and cook until done.<\/p>\n\n\n\n<p class=\"has-large-font-size\">Vegetables:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Blanch the\nvegetables then saut\u00e9 in butter, salt and pepper.<\/p>\n\n\n\n<p class=\"has-large-font-size\">Pickled Onion:<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Julienne the\nonion then mix with orange juice oregano and salt.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Plate the rice add\nthe shrimp, drizzle shrimp with the chilmole sauce then add the vegetables and\ngarnish with the pickled onions.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">The last step is\nthe best.
